A hearty, cheesy, and flavorful Beefy Mexican Layered Bake that combines seasoned ground beef, beans, corn, and salsa between layers of soft tortillas and melted cheddar cheese.

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup salsa
  • 6 flour tortillas (8-inch size)
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 jalapeño, sliced (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef and onion for 5-7 minutes. Add minced garlic and cook for 1 more minute.
  3. Stir in taco seasoning, black beans, corn, diced tomatoes, and salsa. Simmer for 5 minutes.
  4. Place two tortillas at the bottom of the baking dish. Spread half of the beef mixture, 1/3 of the cheese, and half of the sour cream.
  5. Repeat the layer: two tortillas, the remaining beef mixture, 1/3 of the cheese, and the remaining sour cream.
  6. Top with the final two tortillas, the remaining cheese, and sliced jalapeños if desired.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until bubbly.
  8. Let stand for 10 minutes, garnish with cilantro, and slice into squares to serve.

  • You can substitute ground turkey or chicken for a leaner option.
  • For a spicier kick, use 'hot' salsa or add extra jalapeños between layers.
  • Ensure you drain the beans and corn well to prevent the bake from becoming soggy.
