- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups cooked rice (white or brown)
- 2 cups shredded cheddar cheese
- 8 large flour tortillas
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- Sour cream (for serving, optional)
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
- In a large skillet over medium heat, brown the ground beef and onion for 5-7 minutes. Add minced garlic and cook for 1 more minute.
- Stir in black beans, corn, diced tomatoes with juices, taco seasoning, and salsa. Simmer for 5 minutes.
- In a separate bowl, mix the cooked rice with 1 cup (half) of the shredded cheddar cheese.
- Assemble the burritos by spooning the beef mixture and cheesy rice into each tortilla. Roll tightly and place seam-side down in the baking dish.
- Pour any leftover beef mixture over the rolled burritos and sprinkle with the remaining 1 cup of cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until the cheese is golden and bubbly.
