  • 1 cup boiling water
  • 1 package (3 ounces) strawberry Jell-O
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup whipped topping (like Cool Whip)
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh strawberries for garnish (optional)

Instructions

  1. If making a homemade crust, preheat oven to 350°F, combine 1.5 cups graham cracker crumbs, 1/3 cup melted butter, and 1/4 cup sugar. Press into a 9-inch pan and bake for 8-10 minutes. Let cool completely.
  2. In a medium bowl, pour boiling water over strawberry Jell-O powder and stir for 2 minutes until dissolved. Let cool at room temperature for 10 minutes.
  3. In a separate bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped topping.
  4. Spread the cream cheese mixture into the bottom of the cooled crust.
  5. Stir the sliced strawberries into the cooled Jell-O mixture, then pour it over the cream cheese layer.
  6. Refrigerate for at least 4 hours or overnight until the Jell-O is completely set.
  7. Garnish with fresh strawberries before serving.
