- 2 cups fresh or frozen raspberries
- 1/2 cup honey or maple syrup
- 1 cup Greek yogurt (plain or vanilla)
- Place the raspberries in a blender or food processor and blend until smooth (or leave slightly chunky if preferred).
- Add the honey or maple syrup to the puree and blend again until well combined. Taste and adjust sweetness if necessary.
- Gently fold in the Greek yogurt using a spatula until evenly distributed.
- Pour the mixture into popsicle molds, filling each about three-quarters full.
- Insert popsicle sticks and freeze for at least 4 to 6 hours, or until completely solid.
- Run the molds under warm water for a few seconds to easily release the popsicles before serving.
Notes
- If using frozen raspberries, no need to thaw before blending.
- For a marbled look, alternate spoonfuls of raspberry puree and yogurt into the molds instead of mixing them.
- Ensure you leave a little space at the top of the mold as the liquid expands when freezing.
