- 1 pound ground beef or Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced

- 4 cups beef broth

- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the diced onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic, oregano, basil, and red pepper flakes. Cook for another minute until fragrant.
- Pour in the crushed tomatoes and beef broth, stirring to combine. Bring the mixture to a gentle boil.
- Add the broken lasagna noodles to the pot. Reduce the heat to a simmer and cook for 10-12 minutes, or until the noodles are tender, stirring occasionally.
- In a small bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper.
- Stir the ricotta mixture into the soup until well combined and melted.
