30-Minute One Pot Lasagna Soup for Easy Comfort!

A hearty, comforting 30-minute meal that delivers all the classic flavors of traditional lasagna in a simple, one-pot soup format.

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or Italian sausage, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  2. Stir in the diced onion and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic, oregano, basil, and red pepper flakes. Cook for another minute until fragrant.
  3. Pour in the crushed tomatoes and beef broth, stirring to combine. Bring the mixture to a gentle boil.
  4. Add the broken lasagna noodles to the pot. Reduce the heat to a simmer and cook for 10-12 minutes, or until the noodles are tender, stirring occasionally.
  5. In a small bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper.
  6. Stir the ricotta mixture into the soup until well combined and melted.
  7. Taste and adjust seasoning. Serve hot, garnished with remaining cheese and fresh herbs.

Notes

  • For a leaner version, use ground turkey or chicken sausage.
  • If the soup gets too thick, add an extra splash of beef broth.
  • Break the lasagna noodles into bite-sized pieces for easier eating.
