  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour

  • 1/4 cup chopped fresh parsley (or 2 tablespoons dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or coat with cooking spray.
  2. In a large mixing bowl, combine the cooled spaghetti, Parmesan, mozzarella, eggs, flour, breadcrumbs, parsley, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Using a 1/4 cup measuring cup, scoop the mixture and form it into flat patties.
  4. Place the patties on the prepared baking sheet, leaving space between each.
  5. Lightly spray the tops with cooking spray or drizzle with olive oil for extra crispiness.
  6. Bake for 20-25 minutes, flipping the fritters halfway through, until golden brown and crispy on both sides.
  7. Let cool for a few minutes before serving with marinara sauce or sour cream.
