- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 cup vegetable oil (for frying)
- 1 cup mixed vegetables (peas, carrots, and corn)
- 3 green onions, sliced
- 2 large eggs, lightly beaten
- 1/4 cup soy sauce
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha (adjust to taste)
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Sesame seeds and extra green onions for garnish
- In a bowl, combine flour, salt, black pepper, garlic powder, and paprika. Toss chicken pieces in the mixture until well coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Fry chicken for 5-7 minutes until golden brown and cooked through. Drain on paper towels.
- In the same skillet, stir-fry mixed vegetables for 2-3 minutes. Push to the side and scramble the beaten eggs until cooked, then mix with vegetables.
- Add the cooked rice to the skillet, breaking up clumps. Stir and let the rice crisp slightly on the bottom.
- Pour in soy sauce, sweet chili sauce, and sriracha. Toss until the rice is evenly coated and hot.
- Add the crispy chicken and sesame oil back to the skillet. Toss to combine and season with salt and pepper.
- Serve hot, garnished with sesame seeds and sliced green onions.
