BBQ Pineapple Chicken Kabobs: Easy Summer Recipe

A delicious and easy summer recipe featuring tender marinated chicken, sweet fresh pineapple, and crisp vegetables grilled to perfection on skewers.

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch chunks
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons vegetable oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together soy sauce, honey, vegetable oil, apple cider vinegar, garlic, ginger, black pepper, and red pepper flakes.
  3. Add chicken cubes to the marinade, cover, and refrigerate for 30 minutes to 2 hours.
  4. Prep the pineapple, peppers, and onion by cutting them into 1-inch chunks.
  5. Thread the chicken, pineapple, and vegetables onto the skewers in an alternating pattern.
  6. Preheat the grill or grill pan to medium-high heat.
  7. Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F.
  8. Remove from grill and let rest for a few minutes before serving.

Notes

  • If using wooden skewers, do not skip the soaking step.
  • For the best flavor, marinate the chicken for the full 2 hours.
  • Ensure all pieces are cut to a similar size for even cooking.
  • Discard any leftover marinade that has touched raw chicken.
