Blueberry Muffins: The Ultimate Fluffy Recipe.

A classic recipe for bakery-style blueberry muffins that are incredibly fluffy, bursting with fresh berries, and featuring a hint of lemon zest for a bright finish.

  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 cups fresh blueberries (or frozen)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners or grease it lightly with cooking spray.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until no clumps remain.
  3. In another bowl, combine the melted butter, egg, vanilla extract, buttermilk, and optional lemon zest. Stir until well blended.
  4. Pour the wet ingredients into the dry ingredients. Gently fold them together using a spatula, being careful not to overmix.
  5. Gently fold in the blueberries until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.

Notes

  • Do not overmix the batter to ensure a light and fluffy texture.
  • If using frozen blueberries, do not thaw them before adding to the batter to prevent streaking.
  • For a better presentation, press a few extra berries onto the tops of the muffins before baking.
  • Best served warm with a pat of butter.
