  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon vegetable oil (optional)

Instructions

  1. In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Blend until smooth and creamy using a wooden spoon or electric mixer.
  2. Add the powdered sugar, vanilla extract, and salt. Mix until a thick dough forms that is firm enough to roll.
  3. Cover the bowl with plastic wrap and refrigerate for 30 minutes to make the dough easier to handle.
  4. Scoop about a tablespoon of the mixture and roll into a ball. Place on a baking sheet lined with parchment paper. Repeat for the remaining dough.
  5. In a microwave-safe bowl, combine chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring until smooth.
  6. Using a fork, dip each ball into the melted chocolate until fully coated. Let excess chocolate drip off and return to the parchment paper.
  7. Refrigerate the balls for another 30 minutes until the chocolate coating is fully set.

Notes

  • If the dough is too soft, add more powdered sugar one tablespoon at a time.
  • For traditional Buckeye styling, leave a small circle of peanut butter visible at the top when dipping.
  • Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
