  • 1 medium head of cabbage, chopped
  • 1 large onion, diced
  • 2 green bell peppers, chopped
  • 3 carrots, sliced
  • 3 stalks of celery, chopped
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 6 cups vegetable broth or water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: hot sauce for a kick
  • 1 splash of olive oil

Instructions

  1. Prep all your veggies by chopping the cabbage, dicing the onion, and slicing the bell peppers, carrots, and celery.
  2. In a large pot, heat a splash of olive oil over medium heat. Sauté the diced onion until translucent (about 5 minutes).
  3. Add the green bell peppers, carrots, and celery to the pot. Stir and cook for another 5 minutes until softened.
  4. Stir in the chopped cabbage and cook for a few minutes until it starts to wilt.
  5. Pour in the diced tomatoes (with juice) and the vegetable broth or water. Stir to combine.
  6. Add the garlic powder, onion powder, dried basil, and dried oregano. Season with salt, pepper, and optional hot sauce.
  7. Bring the soup to a boil, then reduce heat and simmer uncovered for 30 to 40 minutes, stirring occasionally.
  8. Once the cabbage is tender and flavors have melded, ladle into bowls and serve hot.
