Instructions

  1. Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the shredded coconut, flour, sugar, salt, and baking powder. Stir until evenly mixed.
  3. In a separate bowl, whisk together the egg whites, vanilla extract, and almond extract (if using) until frothy but not stiff.
  4. Pour the egg mixture into the dry ingredients and stir until well combined and sticky.
  5. Using a tablespoon or a small cookie scoop, drop rounded mounds of the mixture onto the prepared baking sheet, spacing them slightly apart.
  6. Bake for 15 to 20 minutes, or until the edges are golden brown and the tops look set.
  7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
