A flavorful and zesty 30-minute meal featuring pan-seared chicken breasts smothered in a bold garlic-herb 'cowboy butter' sauce with fresh spinach and cherry tomatoes.

  • 4 boneless, skinless chicken breasts
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper, to taste
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh spinach
  • 1/4 cup chopped fresh parsley, for garnish
  • Lemon wedges, for serving

Instructions

  1. Heat a large skillet over medium-high heat. Season chicken breasts generously with salt and black pepper on both sides.
  2. In a mixing bowl, whisk together melted butter, minced garlic, lemon juice, Dijon mustard, smoked paprika, onion powder, oregano, thyme, cayenne pepper, and a pinch of salt and pepper.
  3. Place chicken in the hot skillet and sear for 5-7 minutes until golden brown. Flip the chicken and pour the cowboy butter mixture over the top.
  4. Reduce heat to medium. Cook for another 5-7 minutes, basting the chicken frequently with the butter sauce until the internal temperature reaches 165°F.
  5. Add halved cherry tomatoes and spinach to the skillet. Stir and cook for 2-3 minutes until the spinach is wilted and tomatoes are soft.
  6. Remove from heat, garnish with fresh parsley, and serve with lemon wedges.

  • Use a meat thermometer to ensure chicken reaches 165°F without overcooking.
  • Serve over rice, pasta, or crusty bread to soak up the extra butter sauce.
