Cowboy Caviar: The ultimate zesty party dip.

Cowboy Caviar is a vibrant, zesty party dip packed with beans, fresh vegetables, and a tangy lime-cumin dressing. Often called Texas Caviar, it's a healthy and crowd-pleasing appetizer that doubles as a salad or taco topping.

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) black-eyed peas, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, jalapeño (if using), cherry tomatoes, and avocado. Toss gently to avoid mashing the avocado.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, cumin, garlic powder, salt, and pepper until well blended.
  3. Pour the dressing over the bean and vegetable mixture and toss until everything is evenly coated.
  4. Adjust seasoning with additional salt or lime juice if desired.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Serve with tortilla chips or as a topping for grilled meats and tacos.

Notes

  • Wait to add the avocado until just before serving if you plan on making this more than a few hours in advance.
  • For extra heat, leave some seeds in the jalapeño.
  • This dish stays fresh in the refrigerator for up to 3 days.
