A vibrant, zesty, and refreshing party dip packed with beans, corn, and colorful vegetables tossed in a tangy cumin-lime dressing.

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) black-eyed peas, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the black beans, black-eyed peas, corn, cherry tomatoes, red bell pepper, green bell pepper, red onion, jalapeño, and cilantro.
  2. In a separate small bowl, whisk together the olive oil, red wine vinegar, lime juice, ground cumin, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the vegetable mixture and gently toss until all ingredients are evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to marinate.
  5. Give it a final toss before serving with tortilla chips or as a side dish.

Notes

  • For the best flavor, let the dip chill for 2-4 hours before serving.
  • If you prefer more heat, leave the seeds in the jalapeño.
