A smooth, velvety, and easy-to-make Creamy Asparagus Soup that combines fresh asparagus, potatoes, and a touch of cream for a comforting and nutritious meal.

  • 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 medium potato, peeled and diced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon fresh lemon juice
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, stirring frequently.
  3. Add the asparagus pieces and diced potato to the pot. Stir and cook for 3-4 minutes to soften.
  4. Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until the vegetables are tender.
  5. Remove from heat and puree the soup using an immersion blender (or a standard blender in batches) until smooth.
  6. Return the soup to the pot, stir in the heavy cream, and heat gently over low heat without boiling.
  7. Season with salt, pepper, and lemon juice. Serve hot with optional garnishes.

Notes

  • For a vegan version, substitute heavy cream with coconut milk or cashew cream.
  • Save the asparagus tips and blanch them separately to use as a decorative garnish.
  • Be careful when blending hot liquids in a standard blender; leave the lid slightly ajar to let steam escape.
