- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 medium potato, peeled and diced
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon fresh lemon juice
- Fresh chives or parsley for garnish (optional)
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring frequently.
- Add the asparagus pieces and diced potato to the pot. Stir and cook for 3-4 minutes to soften.
- Pour in the broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until the vegetables are tender.
- Remove from heat and puree the soup using an immersion blender (or a standard blender in batches) until smooth.
- Return the soup to the pot, stir in the heavy cream, and heat gently over low heat without boiling.
- Season with salt, pepper, and lemon juice. Serve hot with optional garnishes.
Notes
- For a vegan version, substitute heavy cream with coconut milk or cashew cream.
- Save the asparagus tips and blanch them separately to use as a decorative garnish.
- Be careful when blending hot liquids in a standard blender; leave the lid slightly ajar to let steam escape.
