Instructions

  1. Cook the bacon until crispy using a skillet or oven; drain on paper towels and crumble into bite-sized pieces once cooled.
  2. In a large mixing bowl, combine the thawed peas, crumbled bacon, shredded cheddar cheese, and chopped red onion.
  3. In a small separate bowl, whisk together mayonnaise, apple cider vinegar, and sugar until smooth; season with salt and pepper.
  4. Pour the dressing over the pea mixture and gently fold until evenly coated, being careful not to mash the peas.
  5. Fold in fresh parsley if using for extra color and flavor.
