A rich and comforting one-pot Creamy Chicken & Rice Soup featuring tender vegetables, shredded chicken, and aromatic herbs in a velvety broth.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt (adjust to taste)
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 1 cup heavy cream
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add minced garlic and cook for another minute, stirring constantly.
  3. Add diced carrots and celery; sauté for about 5 minutes until they start to soften.
  4. Stir in the dried thyme, dried rosemary, black pepper, and salt.
  5. Pour in the chicken broth and bring to a gentle boil.
  6. Add the uncooked rice, reduce heat to a simmer, cover, and cook for 15-20 minutes until rice is tender.
  7. Stir in the shredded chicken and heavy cream. Simmer for another 5 minutes.
  8. Stir in the lemon juice just before serving.
  9. Taste and adjust seasoning, then garnish with fresh parsley.

Notes

  • Rotisserie chicken is a great time-saver for this recipe.
  • If the soup becomes too thick as it sits, add a splash of extra broth or water to reach desired consistency.
  • For best results, do not overcook the rice to prevent it from becoming mushy.
