A quick and refreshing meal featuring shredded chicken tossed in a creamy Greek yogurt and herb dressing, balanced with sweet grapes and crunchy celery, all wrapped in a fresh tortilla.

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, finely chopped
  • 1/2 cup red grapes, halved
  • 1/4 cup sliced almonds (optional)
  • 4 large lettuce leaves (like romaine or butter lettuce)
  • 4 whole wheat or spinach tortillas

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Stir until well coated.
  2. Add the garlic powder, onion powder, salt, and black pepper. Mix thoroughly to distribute the seasonings.
  3. Gently fold in the chopped celery, halved grapes, and sliced almonds (if using).
  4. Lay the tortillas flat and place one lettuce leaf in the center of each.
  5. Spoon the chicken salad mixture onto the lettuce leaves.
  6. Fold in the sides of the tortillas and roll them up tightly from the bottom to the top.
  7. Slice diagonally and serve.

Notes

  • For a low-carb version, skip the tortilla and use double lettuce leaves as the wrap.
  • You can use rotisserie chicken to save time.
  • Store leftovers in an airtight container in the fridge for up to 3 days; however, it is best to assemble the wraps just before eating to prevent sogginess.
