Crispy Breaded Chicken with Spicy Peppers & Onions

A delicious and crunchy dish featuring golden-brown panko-breaded chicken breasts topped with a savory and slightly spicy sauté of bell peppers and onions.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pound chicken breasts to an even 1/2-inch thickness using plastic wrap and a mallet.
  2. Set up a breading station: one dish with flour mixed with salt, pepper, garlic powder, onion powder, paprika, and cayenne; a second dish with whisked eggs and buttermilk; and a third dish with breadcrumbs.
  3. Dredge each chicken breast in flour, dip in the egg mixture, and coat thoroughly with breadcrumbs.
  4. Heat vegetable oil in a large skillet over medium-high heat. Fry chicken for 5-7 minutes per side until golden brown and internal temperature reaches 165°F. Drain on paper towels.
  5. In a separate skillet, heat olive oil over medium heat. Sauté sliced peppers and onions with oregano, salt, and pepper for 5-7 minutes until tender.
  6. Serve the crispy chicken topped with the sautéed vegetables and garnish with fresh parsley.

Notes

  • For extra spice, increase the cayenne pepper or add red chili flakes to the vegetables.
  • Ensure the oil is hot before adding chicken to prevent a soggy crust.
  • Panko breadcrumbs provide a crunchier texture than standard breadcrumbs.
