- 4 medium cucumbers, diced
- 4 medium ripe tomatoes, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wash the cucumbers and tomatoes under cool running water.
- Dice the cucumbers and tomatoes into bite-sized pieces and place them in a large mixing bowl.
- Thinly slice the red onion and add it to the bowl along with the crumbled feta cheese (if using).
- Chop the fresh parsley and sprinkle it over the vegetable mixture.
- In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
- Pour the dressing over the salad and gently toss until all ingredients are well coated.
- Let the salad sit for 10-15 minutes at room temperature or in the fridge to allow the flavors to meld before serving.
Notes
- For the best texture, use English or Persian cucumbers as they have thinner skins and fewer seeds.
- If you prefer a milder onion flavor, soak the sliced red onions in cold water for 5 minutes before adding to the salad.
- This salad is best served fresh but can be stored in the refrigerator for up to 24 hours.
- To make it vegan, simply omit the feta cheese.
