Cucumber and Tomato Salad: Easy 15-Minute Recipe

A refreshing and healthy 15-minute salad featuring crisp cucumbers, juicy tomatoes, and a zesty herb vinaigrette. Perfect as a quick side dish or a light summer snack.

  • 4 medium cucumbers, diced
  • 4 medium ripe tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash the cucumbers and tomatoes under cool running water.
  2. Dice the cucumbers and tomatoes into bite-sized pieces and place them in a large mixing bowl.
  3. Thinly slice the red onion and add it to the bowl along with the crumbled feta cheese (if using).
  4. Chop the fresh parsley and sprinkle it over the vegetable mixture.
  5. In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and gently toss until all ingredients are well coated.
  7. Let the salad sit for 10-15 minutes at room temperature or in the fridge to allow the flavors to meld before serving.

Notes

  • For the best texture, use English or Persian cucumbers as they have thinner skins and fewer seeds.
  • If you prefer a milder onion flavor, soak the sliced red onions in cold water for 5 minutes before adding to the salad.
  • This salad is best served fresh but can be stored in the refrigerator for up to 24 hours.
  • To make it vegan, simply omit the feta cheese.
