Delicious Loaded Baked Potato Salad: Easy Recipe!

A creamy and savory potato salad that captures all the flavors of a loaded baked potato, featuring tender baby potatoes, sharp cheddar cheese, crispy bacon, and a tangy sour cream dressing.

Ingredients

Scale
  • 2 pounds baby potatoes, washed and halved
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup green onions, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the halved baby potatoes and cook until fork-tender (about 15-20 minutes). Drain and let cool.
  2. In a large mixing bowl, whisk together the sour cream, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper until smooth.
  3. Gently toss the cooled potatoes in the dressing until thoroughly coated.
  4. Fold in the shredded cheddar cheese, crumbled bacon, chopped green onions, and diced tomatoes.
  5. Transfer to a serving dish and garnish with fresh parsley.
  6. Serve immediately or refrigerate for at least one hour to allow flavors to meld.

Notes

  • For the best texture, ensure potatoes are completely cooled before mixing to prevent the dressing from melting.
  • You can use red potatoes or Yukon Gold if baby potatoes are unavailable.
  • Make it ahead of time as the flavor improves after chilling.
