A rich, decadent, and incredibly moist chocolate cake infused with Coca-Cola, topped with a fudgy chocolate-cola frosting. This southern classic is famous for its unique texture that literally melts in your mouth.

Ingredients

Scale
  • 1 cup Coca-Cola
  • 1/2 cup vegetable oil
  • 1/2 cup unsalted butter
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 1/2 cup mini chocolate chips (optional)
  • For the Frosting:
  • 1/2 cup unsalted butter, softened
  • 2/3 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1/3 cup Coca-Cola
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan, or line it with parchment paper.
  2. In a medium saucepan over medium heat, combine the Coca-Cola, vegetable oil, butter, and cocoa powder. Stir until the butter is melted and the mixture is smooth. Remove from heat and let cool slightly.
  3. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt.
  4. Create a well in the center of the dry ingredients and add the cooled Coca-Cola mixture, eggs, vanilla extract, and buttermilk. Mix until just combined. Fold in mini chocolate chips if using.
  5. Pour the batter into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the frosting: Cream together softened butter and cocoa powder. Gradually add powdered sugar and Coca-Cola, alternating until smooth. Stir in vanilla.
  8. Spread the frosting generously over the cooled cake, cut into squares, and serve.

Notes

  • Do not overmix the batter to ensure the cake remains light and airy.
  • Ensure the Coca-Cola mixture has cooled slightly before adding the eggs to prevent scrambling them.
  • The mini chocolate chips add an extra layer of texture but are entirely optional.
  • Classic Coca-Cola works best; diet versions may alter the flavor and texture.
