Chicken Quesadillas: Easy 15-Minute Recipe!

A quick and delicious 15-minute meal featuring seasoned shredded chicken, melted cheese, and sautéed vegetables folded into a crispy, golden-brown flour tortilla.

  • 2 cups cooked chicken, shredded or diced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 2 tablespoons olive oil or butter
  • Sour cream, salsa, or guacamole for serving

Instructions

  1. Heat a large skillet over medium heat and add one tablespoon of olive oil or butter.
  2. Sauté the diced onions and bell peppers for 3-4 minutes until soft and fragrant.
  3. In a mixing bowl, combine the shredded chicken, sautéed vegetables, garlic powder, cumin, chili powder, salt, and pepper.
  4. Lay a tortilla flat and sprinkle half of it with cheese, then add the chicken mixture and another layer of cheese. Fold the tortilla in half.
  5. Wipe the skillet, add the remaining oil or butter, and cook the quesadilla for 3-4 minutes per side until golden brown and the cheese is melted.
  6. Let rest for one minute, slice into wedges, and serve with desired toppings.

Notes

  • You can use rotisserie chicken to save time.
  • Ensure the skillet is not too hot to prevent burning the tortilla before the cheese melts.
  • Customize the spice level by adding diced jalapeños or extra chili powder.
