Easy Beef Burrito Casserole Bake: Quick Dinner!

A hearty and comforting oven-baked dish featuring flour tortillas stuffed with seasoned ground beef, black beans, corn, and cheesy rice, topped with melted cheddar cheese.

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups cooked rice (white or brown)
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Sour cream (for serving, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook ground beef and onion until browned (5-7 minutes). Add garlic and cook for 1 more minute.
  3. Stir in black beans, corn, diced tomatoes, taco seasoning, and salsa. Simmer for 5 minutes.
  4. In a separate bowl, mix the cooked rice with 1 cup (half) of the shredded cheddar cheese.
  5. Assemble burritos by spooning the beef mixture and cheesy rice into each tortilla; roll tightly and place seam-side down in the baking dish.
  6. Pour any leftover beef mixture over the rolled burritos and sprinkle with the remaining 1 cup of cheese.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until cheese is bubbly and golden.
  8. Let cool for 5 minutes, garnish with cilantro, and serve with sour cream.

Notes

  • To save time, use pre-cooked rotisserie chicken instead of ground beef.
  • Ensure the burritos are placed seam-side down to prevent them from opening during baking.
  • For a spicier kick, use 'hot' salsa or add diced jalapeños to the beef mixture.
