  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 1/4 cup fresh lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup white chocolate chips (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth.
  3. Add eggs one at a time, whisking well after each. Stir in the vanilla extract, lemon zest, and fresh lemon juice.
  4. In a separate bowl, whisk together flour, baking powder, salt, and baking soda.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
  6. Fold in white chocolate chips if using.
  7. Pour batter into the prepared pan and spread evenly. Tap the pan to release air bubbles.
  8. Bake for 20 to 25 minutes until edges are lightly golden and a toothpick comes out with moist crumbs.
  9. Let cool in the pan for 10 minutes, then lift out using parchment paper to cool completely on a wire rack.
  10. Dust with powdered sugar and slice into squares.
