Easy Coconut Chicken Rice Bowl: Fast & Tasty!

A fast and flavorful meal featuring tender chicken thighs sautéed with ginger and garlic, served over creamy coconut-infused jasmine rice with a hint of lime.

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup frozen peas and carrots mix
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Rinse jasmine rice under cold water until clear. In a medium saucepan, combine rice, 1 cup of coconut milk, and 1 cup of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
  2. While rice cooks, heat olive oil in a large skillet over medium heat. Sauté minced garlic and grated ginger for about 1 minute until fragrant.
  3. Add chicken pieces to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for 5-7 minutes until golden brown and cooked through.
  4. Stir in soy sauce and lime juice. Add frozen peas and carrots, cooking for another 3-4 minutes until vegetables are heated through.
  5. Assemble bowls by layering coconut rice at the bottom and topping with the chicken and vegetable mixture.
  6. Garnish with fresh cilantro and serve with lime wedges.

Notes

  • For a creamier rice, use full-fat coconut milk; for a lighter version, use light coconut milk.
  • Ensure the skillet is hot before adding chicken to get a nice golden sear.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
