  • 1 medium head of green cabbage, chopped
  • 6 slices of bacon, chopped
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon butter (optional)

Instructions

  1. Heat a large skillet over medium heat and cook chopped bacon until crispy (5-7 minutes). Use a slotted spoon to remove bacon and set aside on paper towels, leaving the grease in the pan.
  2. Add sliced onion to the bacon grease and sauté for 3-4 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  3. Add the chopped cabbage to the skillet. Season with salt, black pepper, and red pepper flakes.
  4. Cook for 10-15 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.
  5. Drizzle in apple cider vinegar and add butter (if using), stirring well to combine.
  6. Stir the crispy bacon back into the skillet. Taste and adjust seasonings as needed before serving hot.

Notes

  • For a softer texture, cover the pan with a lid for a few minutes during the cabbage cooking process.
  • Ensure you don't drain the bacon grease, as it provides the primary flavor base for the vegetables.
  • Green cabbage works best, but Savoy cabbage is a good substitute for a milder flavor.
