  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef (or ground turkey)
  • 1 bell pepper, diced (red or green)
  • 2 tablespoons chili powder

  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup beef broth (or chicken broth)
  • Salt and pepper to taste
  • Optional: shredded cheese, sour cream, green onions, fresh cilantro

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat and sauté diced onion for 5 minutes until translucent.
  2. Add minced garlic and cook for 1 minute, stirring constantly.
  3. Add the ground beef, breaking it up with a spoon, and cook until browned (6-8 minutes). Drain excess fat if necessary.
  4. Stir in diced bell pepper, chili powder, cumin, smoked paprika, and cayenne pepper; cook for 2-3 minutes to bloom the spices.
  5. Pour in diced tomatoes, kidney beans, black beans, and beef broth. Stir well.
  6. Bring to a gentle boil, then reduce heat to low and cover.
  7. Simmer for at least 30 minutes (up to 1 hour for deeper flavor), stirring occasionally.
  8. Season with salt and pepper to taste and serve with your choice of toppings.
