  • 1 cup black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your oven to 375°F and lightly grease a large baking dish with olive oil or cooking spray.
  2. In a small bowl, mix together the chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  3. Rub the chicken breasts with olive oil and coat thoroughly with the spice mixture.
  4. Place the chicken in the baking dish. In a separate bowl, stir together the corn, black beans, diced bell peppers, and salsa.
  5. Pour the vegetable and salsa mixture over the chicken, spreading it evenly.
  6. Cover the dish with aluminum foil and bake for 25 minutes.
  7. Remove the foil, sprinkle shredded cheddar cheese over the top, and bake uncovered for another 10-15 minutes until the chicken is cooked through and cheese is bubbly.
  8. Let rest for a few minutes, garnish with cilantro, and serve with lime wedges.
