Garlic Butter Steak & Creamy Parmesan Spaghetti Recipe

A luxurious and hearty meal featuring pan-seared ribeye steaks basted in aromatic garlic herb butter, served alongside a rich and velvety creamy Parmesan spaghetti.

  • 2 ribeye steaks (about 1 inch thick)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter (divided)
  • 6 cloves garlic, minced (divided)
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 8 ounces spaghetti
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, drain, and set aside.
  2. Season steaks generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  3. Sear steaks for 4-5 minutes per side for medium-rare. In the final minute, add 4 tbsp butter, 4 cloves minced garlic, rosemary, and thyme. Baste the steaks with the melting garlic butter.
  4. Remove steaks from the skillet and let them rest for 5-10 minutes.
  5. In the same skillet over medium heat, melt the remaining 2 tbsp butter. Add 2 cloves minced garlic and sauté for 30 seconds.
  6. Pour in heavy cream and bring to a simmer. Gradually whisk in Parmesan cheese until smooth. Add reserved pasta water if needed to thin the sauce. Season with salt and pepper.
  7. Toss the cooked spaghetti into the cream sauce until well coated.
  8. Slice the rested steaks against the grain and serve alongside the pasta. Drizzle with remaining garlic butter and garnish with parsley.

Notes

  • Always slice the steak against the grain to ensure maximum tenderness.
  • Do not clean the skillet after cooking the steak; the browned bits (fond) add immense flavor to the pasta sauce.
  • For best results, use freshly grated Parmesan cheese rather than bottled as it melts smoother.
