These Extra Crispy Garlic Parmesan Roasted Potatoes are tossed with savory herbs and finished with a golden, melted parmesan crust. They make the perfect side dish for any meal.

  • 2 pounds baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, toss the halved baby potatoes with olive oil, minced garlic, oregano, thyme, salt, and black pepper until well coated.
  3. Spread the potatoes out in a single layer on the prepared baking sheet.
  4. Roast in the oven for 25 minutes.
  5. Remove the potatoes and toss them. Sprinkle the grated Parmesan cheese evenly over the potatoes.
  6. Return to the oven for another 10 to 15 minutes, or until the cheese is melted and the potatoes are crispy and golden.
  7. Let cool for a minute, garnish with fresh parsley, and serve hot.
