German Cucumber Salad: Easy Creamy Recipe.

A refreshing and classic German Cucumber Salad (Gurkensalat) featuring thinly sliced cucumbers and red onions tossed in a creamy, tangy sour cream and dill dressing.

  • 4 medium cucumbers, thinly sliced
  • 1 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup white vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 cup finely chopped fresh dill (or 1 tablespoon dried dill)
  • 1/2 small red onion, thinly sliced
  • Fresh dill sprigs for garnish (optional)

Instructions

  1. Place the thinly sliced cucumbers in a large bowl and sprinkle with 1 teaspoon of salt. Let sit for 15-20 minutes to draw out excess moisture.
  2. In a separate small bowl, whisk together the sour cream, white vinegar, sugar, black pepper, and chopped dill until smooth.
  3. Drain the cucumbers in a colander and gently pat them dry with a paper towel to ensure a crisp salad.
  4. Add the drained cucumbers and sliced red onions to the dressing bowl. Toss until the vegetables are thoroughly coated.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Stir gently before serving and garnish with fresh dill sprigs if desired.

Notes

  • Using a mandoline helps achieve perfectly uniform cucumber slices.
  • Do not skip the salting and draining step, or the dressing will become watery.
  • For a lighter version, you can substitute half of the sour cream with Greek yogurt.
  • This salad is best served chilled.
