- 1 pre-baked 9-inch pie crust
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 3/4 cups whole milk
- 3 large egg yolks, lightly beaten
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- Whipped cream, for serving (optional)
- Chocolate shavings or cocoa powder, for garnish (optional)
- Preheat your oven to 350°F and bake the pie crust according to package instructions until golden brown; set aside to cool.
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually pour in the milk while whisking constantly to ensure a smooth consistency.
- Place the saucepan over medium heat, whisking constantly until the mixture thickens and begins to bubble (about 5-7 minutes). Remove from heat.
- Temper the eggs by slowly whisking a small amount of the hot mixture into the beaten egg yolks, then pour the egg mixture back into the saucepan.
- Return to heat and cook for 2-3 minutes while stirring until further thickened.
- Remove from heat and stir in the butter and vanilla extract until smooth.
- Pour the filling into the pre-baked crust and smooth the top.
- Cool at room temperature for 30 minutes, then cover and refrigerate for at least 2 hours until set.
- Serve with whipped cream and chocolate shavings if desired.
Notes
- To prevent a skin from forming on the custard, place plastic wrap directly on the surface of the filling while chilling.
- Ensure you temper the yolks slowly to avoid scrambling the eggs.
- Whole milk is recommended for the richest texture.
