Grilled Chicken Caprese: Easy 20-Minute Recipe.

A quick and flavorful 20-minute meal featuring juicy grilled chicken topped with melted mozzarella, fresh tomatoes, basil, and a sweet balsamic glaze.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 2 cups fresh mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • 1 cup fresh basil leaves
  • Balsamic glaze, for drizzling
  • Extra virgin olive oil, for drizzling
  • Fresh basil, for garnish

Instructions

  1. Preheat your grill to medium-high heat and pat the chicken breasts dry with paper towels.
  2. In a small bowl, mix salt, black pepper, garlic powder, and Italian seasoning. Rub the spice blend and olive oil over the chicken.
  3. Place chicken on the grill and cook for 6 to 7 minutes per side, or until the internal temperature reaches 165°F.
  4. During the last 2 to 3 minutes of grilling, place mozzarella slices on the chicken and close the lid to melt.
  5. Remove chicken from the grill and let it rest for 5 minutes.
  6. Top each breast with sliced tomatoes and fresh basil leaves.
  7. Drizzle with balsamic glaze and extra virgin olive oil before serving.

Notes

  • Patting the chicken dry ensures a better sear and prevents steaming.
  • Use a meat thermometer to ensure the chicken reaches exactly 165°F for the best texture.
  • Resting the meat is crucial to keep the juices inside the chicken.
  • For the best flavor, use high-quality balsamic glaze and fresh garden tomatoes.
