Grilled Peach Burrata Salad: Easy Summer Recipe

A refreshing and elegant summer salad featuring caramelized grilled peaches, creamy burrata cheese, and peppery arugula, finished with a sweet balsamic glaze and crunchy toasted nuts.

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper, to taste
  • 4 cups arugula or mixed greens
  • 8 ounces burrata cheese
  • 1/4 cup balsamic glaze
  • 1/4 cup toasted pine nuts or walnuts
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush the cut sides of the halved peaches with olive oil and season with salt and pepper.
  3. Place peaches cut-side down on the grill grates. Grill for 4 to 5 minutes until grill marks appear and they soften.
  4. Flip the peaches and grill for an additional 2 to 3 minutes to warm through, then remove from heat.
  5. In a large bowl, lightly toss the arugula or mixed greens with a drizzle of olive oil, salt, and pepper.
  6. Spread the dressed greens on a large serving platter.
  7. Tear the burrata cheese into pieces and scatter over the greens.
  8. Nestle the warm grilled peaches into the salad.
  9. Drizzle with balsamic glaze and top with toasted pine nuts or walnuts and fresh basil leaves.
  10. Serve immediately.
