  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers
  • Fresh cilantro and lime wedges for serving

Instructions

  1. In a large mixing bowl, whisk together the coconut milk, red curry paste, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, salt, and black pepper until well combined.
  2. Add the chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 1 hour (up to 4 hours or overnight for best results).
  3. Preheat your grill to medium-high heat. If using wooden skewers, ensure they have been soaked in water for at least 30 minutes.
  4. Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece.
  5. Place skewers on the hot grill and cook for 10-12 minutes, turning halfway through, until charred and the internal temperature reaches 165°F.
  6. Optional: Brush leftover marinade onto the chicken during the last few minutes of grilling.
  7. Remove from grill, let rest for a few minutes, and serve with fresh cilantro and lime wedges.
