  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 1 bell pepper, chopped
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 2 cups water
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen corn
  • 1 cup green beans, cut into bite-sized pieces
  • 1 cup elbow macaroni (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up as it cooks. Drain excess fat.
  2. Add chopped onion and minced garlic; sauté for 3-4 minutes until translucent.
  3. Toss in diced carrots, celery, and bell pepper. Cook for 5 minutes until vegetables soften.
  4. Stir in diced tomatoes (with juice), beef broth, water, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat to low and simmer for 15 minutes.
  6. Add frozen corn, green beans, and elbow macaroni (if using). Simmer for 10-12 minutes until pasta and vegetables are tender.
  7. Adjust seasoning to taste and serve hot, garnished with fresh parsley.

Notes

  • For a gluten-free version, omit the macaroni or use a gluten-free pasta alternative.
  • This soup freezes well; however, if freezing, consider adding the pasta fresh when reheating to avoid mushiness.
