- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 ripe mango, diced
- 1/2 red bell pepper, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime (for salsa)
- Salt and pepper to taste (for salsa)
- In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and black pepper.
- Place chicken breasts in a resealable bag or shallow dish, pour marinade over them, and refrigerate for 30 minutes to 2 hours.
- In a separate bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, and a pinch of salt and pepper. Toss gently and set aside.
- Preheat grill or grill pan over medium-high heat.
- Remove chicken from marinade and grill for 6 to 7 minutes per side until the internal temperature reaches 165°F.
- Let the chicken rest for a few minutes before slicing.

Notes
- Do not marinate for more than 2 hours as the lime juice can change the texture of the chicken.
