Honey Lime Chicken with Mango Salsa: Best Recipe!

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe mango, diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime (for salsa)
  • Salt and pepper to taste (for salsa)

Instructions

  1. In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, cumin, chili powder, salt, and black pepper.
  2. Place chicken breasts in a resealable bag or shallow dish, pour marinade over them, and refrigerate for 30 minutes to 2 hours.
  3. In a separate bowl, combine diced mango, red bell pepper, red onion, cilantro, lime juice, and a pinch of salt and pepper. Toss gently and set aside.
  4. Preheat grill or grill pan over medium-high heat.
  5. Remove chicken from marinade and grill for 6 to 7 minutes per side until the internal temperature reaches 165°F.
  6. Let the chicken rest for a few minutes before slicing.
  7. Serve the chicken topped with a generous portion of mango salsa.

Notes

  • Do not marinate for more than 2 hours as the lime juice can change the texture of the chicken.
  • If using a grill pan indoors, lightly grease it with olive oil to prevent sticking.
  • For a spicier salsa, add a finely diced jalapeño.
