These Hot Honey Chicken Skewers are a perfect blend of sweet, savory, and spicy flavors. Tender chicken thighs are marinated in a zesty hot honey mixture and grilled to smoky perfection, making them an ideal appetizer or main course.

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons hot honey (or regular honey mixed with a pinch of red pepper flakes)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Wooden or metal skewers

Instructions

  1. In a large mixing bowl, whisk together the olive oil, soy sauce, apple cider vinegar, hot honey, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper.
  2. Toss the chicken pieces in the marinade until well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours).
  3. Preheat your grill or grill pan over medium-high heat.
  4. If using wooden skewers, ensure they have been soaked in water for 30 minutes. Thread the marinated chicken onto the skewers, leaving a little space between pieces.
  5. Place skewers on the grill and cook for 10-12 minutes, turning occasionally, until charred and the internal temperature reaches 165°F.
  6. During the final minutes of grilling, brush the chicken with extra hot honey for a sticky glaze.
  7. Remove from heat and let rest for a few minutes before serving.

Notes

  • If you don't have store-bought hot honey, simply mix honey with a pinch of crushed red pepper flakes.
  • Soaking wooden skewers is essential to prevent them from catching fire on the grill.
  • Chicken thighs are recommended over breasts as they stay juicier during high-heat grilling.
