These Hot Honey Ribs are tender, slow-cooked baby back ribs glazed with a perfect balance of sweet honey and spicy heat, finished with a caramelized char.

  • 2 racks baby back ribs (about 4 pounds total)
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 cup honey
  • 1/4 cup apple cider vinegar
  • 2 tablespoons hot sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Remove the silver skin membrane from the back of the ribs using a knife and paper towel for grip.
  3. Mix salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper in a small bowl. Rub the spice blend thoroughly over both sides of the ribs.
  4. Place ribs on a foil-lined baking sheet and cover tightly with another sheet of foil.
  5. Bake for 2.5 to 3 hours until tender.
  6. While ribs bake, combine honey, apple cider vinegar, hot sauce, Worcestershire sauce, and red pepper flakes in a saucepan over medium heat. Simmer for 5-7 minutes until slightly thickened.
  7. Remove ribs from oven, uncover, and brush generously with the hot honey sauce.
  8. Optional: Finish on a medium-high grill for 5-10 minutes or under an oven broiler for 5 minutes, basting frequently until caramelized.
  9. Let the ribs rest for 5-10 minutes before slicing between the bones.

  • For extra tender ribs, ensure the foil seal is tight to trap steam.
  • Watch the ribs closely during the broiling/grilling stage as the honey can burn quickly.
  • Adjust the cayenne and red pepper flakes to reach your preferred spice level.
