A delicious and savory Korean BBQ Chicken recipe featuring boneless chicken thighs marinated in a perfect blend of soy sauce, ginger, garlic, and spicy gochujang for an absolute flavor explosion.

  • 2 pounds chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 tablespoon gochujang (Korean red chili paste)
  • 1 tablespoon honey
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a large bowl, whisk together the soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, rice vinegar, gochujang, honey, black pepper, and salt until well combined.
  2. Add the chicken thighs to the bowl and coat thoroughly. Cover and refrigerate for at least 1 hour (or overnight for best results).
  3. Preheat your grill or grill pan to medium-high heat.
  4. Remove chicken from marinade (discard excess marinade) and grill for 6 to 7 minutes per side until the internal temperature reaches 165°F.
  5. Remove from heat and let the chicken rest for 5 minutes to retain juices.
  6. Slice into strips and garnish with chopped green onions and sesame seeds.

  • For the best flavor, marinate the chicken overnight.
  • Ensure the grill is hot before adding chicken to get those perfect sear marks.
