Lemon Angel Food Cake: Easy 2-Ingredient Recipe

A light, airy, and refreshing Lemon Angel Food Cake made with just two simple ingredients. This effortless recipe uses lemon-lime soda to create a fluffy texture with a subtle citrus zing.

Ingredients

Scale
  • 1 box (15 oz) angel food cake mix
  • 1 cup lemon-lime soda (such as Sprite or 7-Up)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 10-inch tube pan, ensuring it remains ungreased so the batter can climb the sides.
  2. In a large mixing bowl, combine the angel food cake mix and the lemon-lime soda.
  3. Using a spatula, gently fold the mixture together until just combined. Do not overmix to preserve the aeration.
  4. Pour the batter into the ungreased tube pan. Shake gently to settle and smooth the top with a spatula.
  5. Bake for 30 to 35 minutes, or until the cake is golden brown and the top springs back when lightly touched.
  6. Remove from the oven and immediately invert the pan onto a wire rack. Let the cake cool completely upside down in the pan (about 1 hour).
  7. Run a knife around the edges and the center tube to loosen the cake, then remove from the pan and serve.

Notes

  • Do not grease the pan; the cake needs to cling to the sides to rise properly.
  • Inverting the pan while cooling is crucial to prevent the cake from collapsing.
  • Serve with fresh berries or whipped cream for added flavor.
  • Ensure the soda is fresh and bubbly for the best rise.
