  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs (oregano and basil)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 1/2 cup sugar-free marinara sauce (optional for dipping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine the ground beef, almond flour, Parmesan cheese, egg, garlic powder, onion powder, Italian herbs, salt, and black pepper. Mix by hand until just combined.
  3. Take a small handful of the meat mixture and flatten it in your palm. Place a tablespoon of shredded mozzarella cheese in the center.
  4. Fold the meat around the cheese to form a ball, ensuring the cheese is completely enclosed. Repeat for the remaining mixture.
  5. Place the stuffed meatballs on the prepared baking sheet. Press a piece of diced bell pepper or onion on top of each meatball if desired.
  6. Bake for 20 to 25 minutes, or until the internal temperature reaches 160°F.
  7. Let the bites cool for a few minutes before serving with sugar-free marinara sauce.
