  • 1 can (14.75 oz) wild-caught salmon, drained and flaked
  • 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
  • 1/2 cup breadcrumbs (preferably whole wheat)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

  1. Gather all ingredients. If using fresh spinach, wash and chop; if using frozen, thaw and squeeze dry.
  2. In a large mixing bowl, combine the flaked salmon, spinach, breadcrumbs, Parmesan cheese, red onion, and minced garlic.
  3. Add the eggs, lemon juice, oregano, dill, salt, and black pepper to the bowl. Mix until well combined.
  4. Shape the mixture into 8 to 10 patties, approximately 1/2 inch thick.
  5. Heat olive oil in a large skillet over medium heat.
  6. Fry the patties for 4 to 5 minutes per side until golden brown and crispy, working in batches if necessary.
  7. Transfer to a paper towel-lined plate to drain excess oil.
  8. Serve warm with lemon wedges or tzatziki sauce.

Notes

  • Ensure all moisture is squeezed out of the spinach to prevent the patties from falling apart.
  • For a gluten-free version, use certified gluten-free breadcrumbs.
  • Canned salmon can be substituted with cooked fresh salmon flakes.
