12 ounces penne pasta
1 pound smoked sausage, sliced (kielbasa or andouille)
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, diced
1 can (14.5 ounces) diced tomatoes, undrained
1 cup chicken broth
1/2 cup honey BBQ sauce
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
Salt and pepper to taste
1 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
1 tablespoon olive oil
Instructions
In a large pot or deep skillet, heat a drizzle of olive oil over medium heat. Add the sliced sausage and cook until browned, about 5-7 minutes.
Add the diced onion, minced garlic, and bell pepper. Sauté for 3-4 minutes until the vegetables soften.
Stir in the penne pasta, undrained diced tomatoes, chicken broth, honey BBQ sauce, Italian seasoning, and red pepper flakes. Season with salt and pepper.
Bring to a gentle boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally, until pasta is al dente. Add more broth if needed.
Remove from heat. Sprinkle shredded cheddar cheese over the top, cover, and let sit for a few minutes until melted.
Garnish with fresh parsley and serve hot.
Notes
Stir occasionally to prevent the pasta from sticking to the bottom of the pot.
For a creamier version, stir in a splash of heavy cream at the end.
Adjust the heat by adding more or less red pepper flakes.
