- 1 pound smoked sausage, sliced (kielbasa or andouille)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup chicken broth
- 1/2 cup honey BBQ sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
- Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced sausage and cook until browned (5-7 minutes).
- Add diced onion and bell pepper; sauté for 3-4 minutes until softened. Stir in minced garlic and cook for 1 minute.
- Stir in diced tomatoes (with juice), chicken broth, honey BBQ sauce, Italian seasoning, and red pepper flakes. Season with salt and pepper.
- Add the penne pasta and stir. Bring to a gentle boil, then reduce heat to low.
- Cover and simmer for 15-20 minutes, stirring occasionally, until pasta is al dente and sauce has thickened.
- Remove from heat. Sprinkle shredded cheddar cheese over the top, cover, and let sit for 5 minutes to melt.
- Stir the melted cheese into the pasta and garnish with fresh parsley before serving.
Notes
- Stir occasionally during simmering to prevent the pasta from sticking to the bottom of the pot.
