A quick and easy recipe for perfectly fluffy mini doughnuts, lightly spiced with cinnamon and nutmeg, fried to golden perfection and customizable with sugar or glaze.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)
  • Chocolate glaze or sprinkles, for topping (optional)

Instructions

  1. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 375°F (190°C), ensuring it is 2-3 inches deep.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Gently stir the wet ingredients into the dry ingredients until just combined; do not overmix.
  5. Transfer the batter into a piping bag or a zip-top bag with the corner snipped off.
  6. Pipe the batter into a mini doughnut pan or directly into the hot oil in small rings.
  7. Fry the doughnuts for 1-2 minutes per side until golden brown and puffed.
  8. Remove with a slotted spoon and drain on paper towels.
  9. Dust with powdered sugar or dip in chocolate glaze while warm.

Notes

  • Do not overmix the batter to ensure a tender texture.
  • Maintain the oil temperature at 375°F to prevent the doughnuts from becoming greasy.
  • If using a chocolate glaze, melt chocolate chips with a splash of heavy cream.
  • Serve fresh for the best taste and texture.
