Pineapple Upside Sugar Cookies: A Tropical Treat!

A delightful tropical twist on classic sugar cookies, featuring juicy crushed pineapple, a caramelized brown sugar center, and a maraschino cherry garnish to mimic the flavors of a traditional pineapple upside-down cake.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup brown sugar, packed
  • 1/4 cup maraschino cherries, halved (optional)
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3 to 5 minutes).
  3. Add the egg and vanilla extract; mix until well combined, scraping down the sides of the bowl.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, mixing just until combined.
  6. Gently fold in the drained crushed pineapple.
  7. In a small bowl, mix the brown sugar with a pinch of cinnamon for the topping.
  8. Scoop a tablespoon of dough, roll into a ball, and place on the baking sheet. Use your thumb to make an indentation in the center.
  9. Fill the indentation with the brown sugar mixture and top with a half maraschino cherry if desired.
  10. Bake for 10 to 12 minutes until edges are lightly golden.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • Ensure the crushed pineapple is very well drained to prevent the dough from becoming too wet.
  • Do not overmix the dough after adding flour to maintain a soft, tender texture.
  • Store cookies in an airtight container for up to 3 days.
