Rice Krispies Easter Egg Treats: Simple Fun Recipe

A festive and fun Easter twist on the classic marshmallow cereal bar, shaped into eggs and decorated with optional chocolate and sprinkles.

  • 3 tablespoons unsalted butter
  • 1 package (10 oz) mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)
  • 1 cup chocolate chips (for dipping, optional)
  • Sprinkles (for decoration, optional)

Instructions

  1. Grease a large mixing bowl and a baking sheet with butter or non-stick spray.
  2. In a large saucepan over low heat, melt the butter.
  3. Add mini marshmallows to the melted butter and stir until completely smooth. Add food coloring now if desired.
  4. Remove from heat and stir in the vanilla extract.
  5. Fold in the Rice Krispies cereal until evenly coated.
  6. Allow the mixture to cool for 1-2 minutes until manageable.
  7. Shape handfuls of the mixture into egg shapes and place them on the prepared baking sheet.
  8. Optional: Melt chocolate chips in 30-second intervals in the microwave. Dip the tops of the eggs into the chocolate and add sprinkles.
  9. Let the treats set until the chocolate is firm before serving.

Notes

  • Grease your hands with butter or oil to prevent the marshmallow mixture from sticking while shaping the eggs.
  • Do not overcook the marshmallows, as this can lead to hard treats.
  • Store in an airtight container at room temperature for up to 3 days.
